5 - 6 lbs white potatoes
2 cups (+/-) Hellman's mayonnaise
3/4 cup (+/-) Mt.Olive sweet pickle relish
8 eggs
2 tsp (+/-) celery seed
salt to taste

Directions:
Directions:
Peel and cube potatoes into about 1/2 inch pieces. Boil in salt water in a dutch oven until soft- fork pierces easily without breaking. Drain. Place in a large serving bowl. At the same time, boil eggs for 8 - 10 minutes. Drain. Put eggs immediately in ice cold water. Peel being careful not to damage at least 2 eggs. Use those eggs to slice for decoration on top of the salad. Dice remaining eggs. Put diced eggs in bowl with potatoes. Add mayonnaise, pickle relish, and celery seed. Salt to taste. Stir thoroughly. Continue to add mayonnaise, relish, and/or celery seed to taste. Top with a little celery seed and sliced eggs.
Refrigerate overnight for best taste.
