1 large onion, chopped
2 Tbsp. safflower oil
7 cups canned chicken broth
1/4 cup barley
1 bay leaf
2 tsp. dried dillweed
1/2 tsp. pepper
1 package soup greens cut into bite sized pieces
2 cups cooked turkey or chicken cut into bite sized pieces

In large saucepot saute onion in oil 5 minutes until tender. Add next 5 ingredients and bring to a boil. Cover and simmer 30 minutes. Add veggies and turkey. Cover and simmer 15 minutes until barley and vegetables are tender. Remove bay leaf.

Just before serving I beat an egg with lemon juice and add some of the hot broth from the soup pot. I keep adding, stirring as I add. I then add this mixture back to the soup slowly, mixing as I add so it doesn't curdle.
