1 cup flaked coconut
1 cup sugar
1/2 cup butter melted (or margarine)
1 egg beaten
1 teaspoon vanilla
12 slices of white bread

Directions:
Directions:
In bowl combine, coconut, sugar, butter, egg and vanilla. Mix well. Spread over each slice of bread. Place on ungreased baking sheet. Bake at 350 deg. for 15-20 minutes or until lightly browned.
So simple, but so good.

Caroline got this recipe from a collegue at Holliday Elementary School where she taught. Caroline suggests you may want to trim off the crusts if you want and cut into smaller pieces for a reception or cut the bread into shapes before baking.
It is really simple and delicious - good anytime - not just for breakfast.
