4-5 chicken breasts
1/2t. minced garlic
1/4t. ground cumin
1/2t. chili powder
1T lime juice
80oz (10C) of chicken broth
1 large onion
1 large can of hominy
1 can Bush's black beans
1 can Bush's chili beans
1 (16oz) Newman's Own mild salsa

Avocado, sour cream, cheese for toppings

Boil chicken in the broth, then set aside to cool.

Add everything else, including the chicken, and simmer on medium head for approx. 30 min.

I’m not sure how it started, but I befriended and became pen pals with my mom’s friends, Larry and Pat Calfee. Pat was my mom’s best friend at Monte Vista High School in Spring Valley, class of 1964. They say that the brand of beans matters, so I’ve always used the Bush brand. I also now only use Newman’s Own Mild Salsa for recipes. It’s delicious!
