Ingredients: One pound plus ground beef 10% or less fat one egg (extra large) 1/2 cup cootage cheese 1/2 medium onion minced 1/2 cup italian style bread crumbs 1/4 teaspoon garlic powder 1 tablespoon Worestershire sauce one teaspoon Lawry's seasoned salt 1/4 tsp black pepper

Directions:Preheat oven to 350 degrees Place meat in bowl Sprinkle with seasoned salt and garlic powder on ground meat Mince onion Add the egg Add cottage cheese Add bread crumbs Mix with hands until smooth. (Don't overmix) Spray baking pan with "Pam" Form into oval loaf. Place baking pan in preheated oven 350 degrees cook for one hour. Remove from baking pan. Let cool 15 minutes. Enjoy |

Notes: Sylvia Leighton (then Boaz) made this for Harold Leighton when they were first dating in 1987. She was a middle-aged mom with two adolescent boys. Harold was a much older gentleman whose wife had just passed away. She was inviting him to her house to have dinner with her boys and thought, “What would a man like that want for dinner?” And so she made him meatloaf for him that night. Harold latter dubbed it the How to Set the Hook meatloaf because he knew after that night that he would marry her. I always use ground turkey, but the recipe calls for ground beef.
