1 lb Beef cubed (you want a cut that isn’t too tough)

¼ c flour
1 T Oregano
1 T Thyme
1 ½ tsp ground Cinnamon
½ tsp crushed Red Pepper flakes
½ tsp ground Black Pepper

½ purple Onion diced
2 T Olive Oil
1 bottle coffee stout
1 T Garlic


Directions:
Directions:
Mix flour, oregano, thyme, cinnamon, red pepper, and black pepper in a dish.
Coat the beef cubes in the flour mixture.
Warm olive oil in a pot on the stove (medium heat), add the onion stirring occasionally for 1 minute.
Add the beef, browning all sides (1 min undisturbed per side).
Scrape the bottom for any stickings.
Turn the heat to low add the beer and garlic, stir.
Cover and simmer on low for 2 hours. Stirring occasionally, maybe once every 30 – 45 min.
Remove lid and turn heat up to medium for 10 minutes to thicken the gravy.

Serve over mashed yams/sweet potatoes with a side of steamed carrots or peas or green beans.

My mom and I were driving through Nashville in 2009 and ended up spending the night there. We walked from our hotel to a little Irish pub, which is no longer there, and I ordered this awesome meal. As I was eating I was playing guess the ingredients. A few months later, after researching variations of Irish stews, I came up with this recipe.
