Approx. 20 lbs of Apples (Mutsu, Stayman Red Delicious, Granny Smith)

2 Tbsp Cinnamon

Two ways to prepare the apples. I have done both. Used the Apple/peeler/corer or cut up the apples into large pieces. Heat the apples in microwave to soften (very important step) . Put the apples through the Food strainer using pumpkin insert. I like the consistency that I get from it! Transfer the apple sauce into a large pot and bring to a low boil. Add the cinnamon, turn down medium low to simmer for 10-15 minutes. While the sauce is cooking. Prepare your jars and lids in bath water.

I do not add any additional sugar into my sauce. The natural sugars from the apples is good enough. Fill the jars and submerge in bath water for 25 minutes. Take out and let cool for the day. Should hear that familiar "pop sound" to ensure your jars are sealed
