⅔ cup oil
2 eggs
3 cups fresh apples (pared and chopped)
1½ cups sugar
1¾ cups flour (unsifted)
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons cinnamon
1 tablespoon vanilla
1 cup chopped nuts
Directions:
Directions:
Preheat oven 325°. Grease a 9x13-inch baking pan. Beat oil and eggs until foaming. Stir in apples and sugar. Mix flour, soda and cinnamon; stir in apples mixture. Stir in vanilla and nuts. Pour batter into baking pan. Bake 45 minutes or until top springs back when touched lightly.
