3 cups sugar
1 cup buttermilk
1 cup chopped pecans
1 teaspoon baking soda
1 teaspoon vanilla
3 tablespoons butter

Directions:
Directions:
Mix sugar, buttermilk and soda in a large pot with a heavy bottom. Using medium heat, cook to the soft ball stage, stirring constantly (when the mixture forms a soft ball when dropped into cold water or use a candy thermometer). Remove from heat, add butter, pecans, and vanilla. Cool slightly and beat until creamy. Drop by spoonsful on wax paper and allow to cool. Store in a tight container.
