Chocolate cake

2/3 cup vegetable oil (or butter)
2 cups granulated sugar
2 eggs
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
2 tsp baking powder
1/2 tsp salt
1 cup 2% buttermilk
1 cup cool brewed coffee
1 tsp vanilla extract

Directions:

In a large bowl, cream together oil, sugar and eggs. Combine dry ingredients together in a separate bowl. Combine buttermilk and coffee. Alternate adding dry and wet ingredients to the creamed mixture, stirring well between each addition. Stir in vanilla extract. Pour into greased 9x13 baking dish and bake at 350º for 35-40 minutes, or until test done.

1/4 cup cocoa powder
1/3 cup reduced fat buttermilk
1 lb powdered sugar
1 tsp vanilla extract

Combine all ingredients until well blended. Spread over cooled cake.
