2 Cups Pecans - finely chopped
2 Cups Sifted Cake Flour
2 Sticks (1 Cup) Butter - room temperature
4 Tbsp. Brown Sugar
⅛ tsp. Kosher Salt
1 tsp. Granulated White Sugar
2 tsp. Vanilla Extract


Topping: - Box of Confectioners Sugar (Powdered)

1. I recommend using a Cuisinart and chopping pecans down to sand like texture.
2. Add 2 sticks room temperature butter and add both white and brown sugar.
3. Ad 2 tsp. Vanilla extract - and 1/8 tsp. salt.
4. Mix 1/2 cup of flour at a time until all flour is incorporated and ingredients mixed together. The mixture will look like a thick paste. Put into fridge for about 1 hour to chill.
5. Roll into bite sized balls and place on cookie sheet.
6. Bake for approximately 15 minutes - turn 1/2 way through cooking time. They should be light golden brown. Let them cool for 5 -10 minutes before carefully moving them to a cooling rack. I lift them off with my fingers.
7. Sift the confectioners sugar heavily over the cookies. They are Snowball cookies after all!
8. I recommend an additional dusting right after serving.
