Ingredients: Crust 21 Oreos 1/4 cup unsalted butter, cut into pieces, melted.
Mousse 12 oz semi sweet chocolate, finely chopped 1 tsp vanilla extract pinch of salt 3 3/4 chilled whipping cream ( divided ) 1/4 cup sugar chocolate shavings

Directions:Preheat oven to 350º
CRUST Butter a 9" springform pan. Grind cookies into fine crumbs. Add melted butter. Press crumb mixture onto bottom and up sides of prepared pan to form a thin crust. Bake crust for 5 minutes. Transfer crust to rack and cool completely. MOUSSE Combine chocolate, vanilla and salt in a bowl. Brink 1 cup cream just to boil in small saucepan. Pour hot chocolate over chopped chocolate. Cool to room temperature, stirring occasionally Beat 2 cups cream and sugar in large bowl to stiff peaks. Fold into cooled chocolate mixture. Pour mousse into prepared crust. Chill until set, about 6 hours. Beat remaining 3/4 cup cream to firm peaks. Add to pie as garnish. Add chocolate shavings. |

Notes: I have made this crust out of coconut cookies and it was quite delicious. This is easy and rich and delicious and can be made ahead. It would be beautiful with fresh raspberries on the top. At Christmas you could ring the top with shiny green holly.
