Shortbread Crust:
2 c. flour
½ c. sugar
2 sticks butter, chilled
¾ c. nuts, chopped (optional)

Pie Filling:
8 T. butter or margarine, softened
1 c. sugar
2 eggs, beaten
2 c. mashed purple sweet potato
½ c. evaporated milk
1 tsp. vanilla extract
¼ tsp. salt

Haupia Topping:
12 oz. can frozen coconut milk
4 - 6 T. sugar
4 - 6 T. cornstarch
¾ c. water

Directions:
CRUST: Cut butter into small cubes. Combine flour, sugar and nuts. Cut butter into flour mixture until sandy texture. Press into 9x13 pan. Bake for 15-20 minutes at 350ºF. FILLING: Cream butter and sugar. Add eggs and mix. Gradually mix in mashed purple sweet potatoes. Add evaporated milk, vanilla and salt. Mix well. Pour onto crust and bake for 30-35 minutes at 350ºF. TOPPING: Thaw coconut milk as instructed. Combine sugar and cornstarch; stir in water and blend well. Stir sugar mixture in into thawed coconut milk; cook and stir over low heat until thickened. Cool slightly. Pour haupia mixture over pie filling and refrigerate. Enjoy!
