35 - 45 Nilla wafers

5-6 ripe bananas, sliced about 4C, divided

3/4C sugar, divided

1/3 C all-purpose flour

dash of saltmilk

4 eggs, separated

2 C milk

1/2 tsp vanilla extract

Reserve 10 to 12 wafers and 1 banana for garnish

1. Combine 1/2 C sugar,flour and salt in top of double boiler.

2. Stir lin 4 eggs yolks, milk; blend well.

3. Cook over boiling water, stirring constantly 5 minutes or until thickened.

4. Remove from heat and stir in vanilla.

5. Spread small amount on bottom of 1-1/2 quart casserole;cover with layer of wafers. Top with layer of sliced bananas.

6. Pour 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers.

7. Make meringue and cover pudding. Sprinkle remaining sugar. Bake at 350º meringue is browned.

8. Cool slightly or chill.
