5-6 c. extra wide egg noodles
16 oz light parmesan alfredo sauce
1 tomato (diced)
1 small sweet pepper (color of choice) sliced or chopped
1/3 c. green onion/scallions
8 oz. sliced mushrooms
1 lb. raw shrimp (remove tails)
1-2 tsp. garlic, minced
2 Tbsp. olive oil

sprinkle parsley to garnish

Optional: Can of sliced pineapple goes well with meal

Thaw shrimp, remove tails. Set aside.

Cook noodles until tender; drain when done.

While noodles cook:
Heat 2 tbsp. olive oil in frying pan. Saute shrimp with garlic for 2-3 minutes, turning once.

Add sliced mushrooms, snipped onions/scallions, peppers and tomatoes.

Add alfredo sauce. Mix well and simmer 5 minutes.

Mix with noodles, sprinkle with parsley, and serve.
