1 large flank steak (2 lbs.)
1 clove garlic
½ hot or sweet sausage
1 small onion, chopped
¼ cup parsley
1 egg beaten
3 tablespoons flour
½ tablespoon salt
2 tablespoons oil
1 can (8 oz.) tomato sauce
12 oz. beer
½ teaspoon chili powder
½ teaspoon sugar
1 bay leaf

Directions:
Directions:
Pound or flatten steak with garlic clove. Combine sausage, onion, parsley and egg. Spread on length of steak and roll. Fasten with string or skewers. Dredge with flour and salt. Brown. Add tomato sauce, beer, chili powder, sugar and bay leaf. Cover and bake until tender for 2 or 3 hours at 350°. Strain fat if necessary.
