3 cups beet juice (from cooking beets)
4 c sugar
3 Tbsp lemon juice
1 pkg certo

Directions:
Directions:
Cover beets with water and cook till beets soft to fork.
Strain juice. Bring beet juice, lemon juice and Certo to a boil. Add sugar and boil a few minutes.
Pour into jars.
Thickens as sets.

Nana and Gogi told Jan, Audrey and Jacki this was kookleberry jelly when they were young. When Dan Morgan and Jacki lived in Lumby, Jacki sent Dan looking for kooleberrys which could not be found.
Jacki called Nana for help and the truth came out. They told the girls it was kooleberry jelly as they did not think they would eat jelly made from beets!
