Ripe fresh Tomatoes
Large pan of boiling water
Large pan of cold water with ice

Wash tomatoes in cool water. Score by making an X across the tops and bottoms.
Blanch by immersing tomatoes a few at a time in boiling water for 15 seconds. Immediately immerse them in cold water This is to easily remove the skin
Peel and cut into quarters or chunks
Place in freezer bags, label, and seal.
They are great in soups,sauces or with fresh vegetables such as okra. Use with any recipe that requires canned tomatoes.
They will last at least 6 months in the freezer.

This allows me to save my favorite fresh tomatoes after growing season is over. This includes especially the Celebrity, Bradley, and Creole varieties that I grow in my garden. While these frozen tomatoes are not good to slice or for salads, they are far better than regular canned tomatoes for cooking.
