Wash and simmer beets with skins on till fork goes in easily to the beets. Cool. Skin beets.
(can make beet jelly with the juice made from cooking the beets)
Sterilize jars (I run thru the dishwasher)
Simmer for 5 minutes: 1 c H2O, 2 c vinegar, 3 c sugar. can double recipe. 1 batch syrup = 3 1/2 quarts made.
Add 1-2 cloves garlic to each jar.
Cut beets in bite sized pieces, add to jar (with garlic) pour hot syrup over.
Lid on (boiled first to soften rubber on lids) , add ring.
Hot water bath 5 minutes
