2 T. butter
6 oz. diced ham
1 large onion, chopped
3 T. flour
32 oz. chicken stock
1 large russet potato, peeled and diced
1 c. evaporated skim milk (or half-and-half)
4 c. fresh or frozen corn
1 red bell pepper, seeded and diced
3 green onions, sliced
salt and pepper to taste
1 T. chopped basil or cilantro

Directions:
Directions:
Melt butter in medium skillet. Add ham and onions; cook for 5 minutes. Stir in flour and cook for 1 minute. Add stock and potatoes; cook over medium-low heat for 15 minutes. Add milk, corn, red pepper and green onions; cook for 10 minutes more. Season to taste with salt and pepper and garnish with basil or cilantro.
