1 large zucchini, cut into 1/8-1/4 inch slices
1/3 C Panko bread crumbs
1/4 C finely grated parmesan cheese
1/4 tsp black pepper
Kosher or sea salt to taste
1/8 tsp garlic powder
1/8 tsp cayenne pepper
3 T milk

Directions:
Directions:
Preheat oven to 425 degrees. Combine the following in a small bowl: breadcrumbs, parmesan cheese, black pepper, salt, garlic powder and cayenne pepper. Pour milk in a separate bowl. Dip zucchini slices into the milk and then dredge into the breadcrumb mixture to coat both sides. Press crumbs onto zucchini slices to ensure crumbs stick.

Arrange zucchini on a non-stick cookie sheet, or spray with Pam. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes longer- being careful not to burn them. Allow to cool to room temperature before storing in an airtight container. Chips will continue to get crispier while cooling.
