Ingredients: 2 cups warm water (hottest tap water) 2 Tbs. instant dry yeast 1/4 cup sugar 1 tsp. salt 6 Tbs. oil (any kind: olive, melted coconut, vegetable) 4-5 cups flour

Directions:Sprinkle yeast over warm water. Stir to dissolve yeast. Add all other ingredients except flour and mix well. Stir in 4 cups flour. Sprinkle some of the 5th cup of flour on your kneading surface and dump the dough onto it. Knead for 10 minutes, incorporating the rest of the flour.
Heat oven to 425 degrees. While oven is heating up, melt 1/4 cup butter in a 9"x 13" pan in the oven and remove, coating all surfaces of pan evenly with the melted butter. (Some will pool in the bottom, but that is good)
Divide dough into 24 pieces, forming a ball out of each one by pulling the top surface around to the bottom making a little handle of dough to hold onto in order to roll each one in melted butter. Turn the "handle" down/underneath as you line them up in baking dish. Set in warm place to let rolls rise for 30 minutes. (I put mine over the burner, off of course, where the oven vents.)
Bake 15 minutes or until golden brown. Yummmmmmm!

Notes: I love baking and bread is a favorite, the fresher the better. These deliciously easy dinner rolls have been a part of my life as long as I can remember. You can also make cinnamon rolls out of the dough by rolling out the whole lump into a rectangle, slather on the butter, sprinkle liberally with brown sugar and cinnamon, roll up from the long edge, slice into 1 1/2 inch pinwheels, set in the melted butter pan, let rise and bake the same as the rolls. Have fun thinking up all kinds of variations for this basic yeast dough.
