2 Deep dish pie crust (or homemade if you can!)
14 Plum tomatoes, thinly sliced
4 Bunches spring onions, finely chopped
2 tbsp AP flour
2 c Mayo
6 oz Shredded Parmesan cheese
8 Slices of Bacon cooked and chopped (optional)
Salt & Pepper to taste

Line pie crust with weights or dried beans. Bake pie crust at 350º for 5 minutes, remove from oven.

Place sliced tomatoes on paper towels to drain, sprinkle with 1 tsp salt. Let stand for at least 10 minutes.

Combine in a bowl the shredded parmesan cheese and mayo. Place a layer of tomatoes in bottom of pie crust, salt & pepper, sprinkle with flour. Add a layer of spring onions, bacon if using. Dot with cheese/mayo mixture. Repeat making 2-3 layers, ending with cheese/mayo mixture to “seal the pie”.

Bake at 350º for approx 30- 45 minutes, look for the top to be slightly browned and bubbly.
