½ c. water
2 Tbsp. white wine vinegar
1 Tbsp. cornstarch
1 clove garlic, minced
½ tsp. salt
½ tsp. dried sweet basil
½ tsp. grated orange zest
1 tsp. olive oil

Directions:
Directions:
Combine the water, vinegar, and cornstarch in a small saucepan. Bring to a boil and cook, stirring constantly, for 1 minute. Remove from the heat and set aside. Combine the garlic and salt in a bowl. Mash with the back of a spoon to make a paste. Stir into the cornstarch mixture with the basil, orange zest, and oil. Cover and chill at least 1 hour.

*Toss this dressing with field greens and garnish with Mandarin oranges. It's like a taste of sunshine.
