1 refrigerated/frozen pie crust, thawed
1 egg white, lightly beaten
1 pkg. semi-sweet chocolate morsels (mini)
1 pkg. (8 oz.) cream cheese, softened
½ c. powdered sugar
2 Tbsp. milk
2 containers (8 oz. each) frozen whipped topping, thawed, divided (or homemade!)
1 can cherry pie filling

Preheat oven to 425º F. Brush edge of crust with egg white, and prick bottom and sides of crust with a fork. Bake 10-12 minutes or until light golden brown. Cool completely.
Melt ½ cup of chocolate morsels (power 5 in microwave--won’t burn if you can put it in for 1:00 or in a saucepan). Chop remaining chocolate in a food processor.
Combine cream cheese and powdered sugar in a large mixing bowl. Whisk in milk and melted chocolate until smooth. Fold in chopped chocolate and 2½ c. of whipped topping until blended.
Spoon ½ of pie filling over bottom of crust; spread with cream cheese mixture. Top with remaining pie filling. Pipe remaining whipped topping around edge (or just spread). For chocolate drizzle, melt ¼ c. additional chocolate morsels with 1 tsp. vegetable oil. Drizzle and refrigerate 30 minutes (drizzle is optional).
