8 oz. Brie (rind removed and cubed)
1 lb. bulk Italian sausage (cooked)
½ c. diced onion
6 slices firm-texture bread (cubed)
½ c. chopped roasted red bell pepper
2 tbsp. minced fresh basil
1 c. Parmesan cheese
8 eggs
2 c. whipping cream
1 tbsp. Dijon mustard
1 tsp. kosher salt
1 tsp. pepper
1 ½ c. Mozzarella cheese
⅓ c. sliced green onions

Directions:
Directions:
1. Cook sausage in large skillet over medium heat until it crumbles (about 5 minutes). Add onions and cook another 5 minutes or until sausage is no longer pink and the onions are soft. Drain well. Set aside.
2. Place bread cubes evenly in bottom of a greased 9x13 inch baking pan. Layer sausage, red pepper, basil, Brie and Parmesan cheese.
3. Whisk together eggs, cream, mustard, salt and pepper. Pour evenly over cheese. Cover and chill overnight.
4. Preheat oven to 350º, pour a small amount of cream over the top of the dish and bake uncovered for 25 minutes. Keep dish in oven and lower heat to 325º for an additional 20 minutes.
5. Remove from oven and sprinkle with mozzarella cheese and return to oven for 10-12 minutes, or until cheese is melted and casserole is set.
6. Remove from over and let set for 10 minutes. Sprinkle with green onion and cut into squares.
