1/3 c. honey
3 tbsp. coconut oil
1/2 tsp. vanilla
3 c. oats
1 c. coconut (either shredded or sliced)
1/2 c. sliced almonds
1/2 tsp. salt
1/3 c. brown sugar
1 1/2 tsp. cinnamon

Preheat oven to 350º
In a pan on low heat combine honey, coconut oil and vanilla- just until melted.
In a large bowl add oats, coconut, almonds, salt, brown sugar and cinnamon- mix thoroughly.
Mix in melted mixture and stir. Spread out on a large baking pan. Bake for 10 minutes, stir and bake for another 10 minutes.
Once its done you can stir as frequently as you like, depending on if you want it in clusters or not. Transfer to a bowl to finish cooling completely, otherwise it could stick to your pan.
