1 medium chopped onion
1/4 c butter
1/4 Almond flour (or 1 T Conjack root)
2 cups chicken broth
1 c cream
1 head of cauliflower
2 cups pepper jack cheese
2 cups Cheddar cheese
1 T Dijon mustard

Directions:
Directions:
Cook onion in butter on med heat for 10 minutes.
Add flour (or Conjack root).
Add cream, milk, and broth, bring to a boil.
Add cauliflower.
Cook on med heat for 10 minutes or until florets are soft.
Blend mixture in blender until creamy (Will need to divide into at least 2 batches and vent the lid while blending because it is so hot).
Return mixture to pot.
Add cheese and mustard.
Melt on low heat.
