8 chicken thighs with skin
1 8oz can tomato sauce
6 cups water
1 yellow onion
3 garlic cloves
handful of fresh parsley
1/2 cup red wine optional
olive oil to brown chicken

Directions:
Directions:
In a large pot or frying pan coat the bottom with olive oil
When hot, add chicken skin side down and cook over medium heat until brown.Turn chicken and brown other side approximately 10 minutes on each side
Salt and pepper chicken
Remove chicken from the pan and brown chopped garlic, parsley and onion.
Drain any excess fat from the pan and return chicken to the pot.
Add water,tomato sauce and red wine.
Cook over low heat for 3 hours until chicken is falling off the bone

Mom made this recipe with stewing hens, basically old chickens. You can add some chicken broth in place of the water.
thicken some of the juices with corn starch and seasoning for a thicker gravy
