Prepare rice according to package instructions. While rice is cooking heat chicken in skillet and add about 3/4 can of enchilada sauce to chicken. When the rice is ready add it to the chicken. Add about a cup of cheese to mixture and mix together. Fill tortilla with one scoop of chicken and rice mixture and roll up like a burrito. Place in 9x13 greased pan. After all tortillas are filled out any remaining enchilada sauce and chicken and rice mixture on top of them and then top with remaining shredded cheese. Place in oven on 350º until cheese is melted.
