Ingredients: Dough: 350 g. all purpose flour 200 g. unsalted butter - cold & cut into small pieces 2 egg yolks + 1 egg 1/3 c. warm milk 1 tsp. sugar 2-1/4 tsp. yeast
Filling: 250 g. ground walnuts 250 g. sugar 1/2 pkge. vanilla sugar 2 egg whites - beaten stiff rum extract - optional

Directions:Dough: Place yeast in bowl with sugar. Pour warm milk over & let sit. Place flour in work bowl of stand mixer. Add butter & work together. Add egg yolks & egg: mix well. REMOVE YEAST FROM TOP OF MILK, then use as much milk as needed. (Be careful with liquid - not all may be needed) Work until soft dough forms - dough holds together. Divide into 1" balls. Roll each ball flat. Place nut filling in middle. Fold in 1/2 to form 1/2 moon shape. Brush top side with egg white wash before baking. Bake at 350º for 15-18 minutes or until lightly brown. Sprinkle with icing sugar.
Filling: Beat egg whites with sugars. Add ground nuts & extract, if using. If not moist enough, add milk (or whipping cream). Must make impressions with spoon. |
