1 green pepper, chopped
1 small yellow onion, chopped
½ c butter
1 can whole kernel corn (do not drain)
1 can cream style corn
1 box Jiffy corn muffin mix
3 eggs, whipped
½ pint sour cream in dollops
1 c. shredded cheddar cheese

Saute the following:
1 green pepper, chopped
1 small yellow onion, chopped
½ c. butter

In separate bowl, mix:
1 can whole kernel corn (do not drain)
1 can cream style corn
1 box Jiffy corn muffin mix
3 eggs, whipped
Add sautéed items
Mix all together

Spray 9x13 pan with Pam/cooking spray
Place mixture into pan
Top with ½ pint sour cream in dollops
Sprinkle 1 c. shredded cheddar cheese

Bake at 375ºs for approx. 45 minutes or until firm
If you double recipe, makes enough for a 9x13 pan plus 8x8 pan
