Beer Can Chicken Recipe

2 1/2 tbsp Farm Boy BBQ chicken seasoning in packet
1 tsp ground black pepper
3 tbsp vegetable oil
3 whole chickens, washed and dried inside and out with paper towels
3 cans of beer - pour out about 1/4 of each can

1. Place partly full beer cans in beer can holders.

2. Mix bbq chicken seasoning, pepper and oil together in small bowl.

3. With disposable gloves on, rest one chicken in the palm of your hand. With other hand, scoop a bit of mixture up with your fingers and rub the inside of the chicken cavity with the mixture. Turn chicken over in your palm so that breast side is down. Scoop a bit more of the mixture up with your fingers and spread all over the back of the chicken. Turn chicken over and repeat procedure. Place chicken on beer can holder. Remember, you have to coat three chickens with this mixture so try not to use more than 2 tbsp per chicken.

4. BBQ over indirect heat at 325ºF for 1 hour to 1 1/4 hours. Check after one hour with instant meat thermometer. Breast should be 165ºF and thigh should be 180ºF. If you don't want to bbq the chicken, it can be made year round in the oven at 325ºF, placing chicken as high up on the oven rack as it will go. Let rest 5 - 10 minutes before carving.

One of my favourite recipes to make and everyone's favourite to eat. Mikayla and Addison go crazy for this chicken and usually eat 2 or 3 helpings!! 4 -6 servings per chicken.
