6 large eggs
1 cup sugar
1 cup canola oil
1 tsp. pure vanilla extract
4 cups unbleached, all purpose flour


Frosting
3 cups powdered sugar
2 Tbl. sweet butter (melted)
1/4 cup milk (any kind)
1 tsp. pure vanilla extract

Directions:
Directions:
Preheat the oven to 400º. Mix eggs, sugar and vanilla extract and beat until incorporated. Add the baking powder and flour. You can use a little bit more flour if needed. Roll onto a clean counter or marble slab.
Bake for approximately 10 minutes or until the bottoms are slightly golden.


Frosting:
Sift the powdered sugar and mix with the vanilla extract, melted butter and milk until smooth.
With an offset spatula or knife frost each one. You can add sprinkles while the frosting is still wet if you would like.

When I was a child Nana would bring us over to her dear friend Tony’s house to make them every holiday season. Tony was Italian and an incredible cook. We loved going over there.
Today they are a tradition at Christmas.
