6 medium - large potatoes
2-3 boiled eggs
onion, finely chopped, to taste
1 jar (small) pimientos
sweet pickle relish, to taste
salt and pepper, to taste
1 T mustard
2 T salad dressing (Miracle Whip)

Directions:
Directions:
Peel and chop potatoes in medium size chunks. Cover about half way up. Cook until tender. Remove from heat. With hand mixer, beat on med until smooth.Add ingredients. Mix by hand after each addition. After tasting you may want to add more of the seasoning.
