2 lb. beef, stewing or chuck
2-3 lg. onions, sliced
5 stalks celery, cut in 2" pieces
6 carrots, cut in 2" pieces
3 lg. potatoes, cut up
1 tsp. salt
1/4 tsp. pepper
4 tbsp. tapioca
4 tbsp. granulated sugar
1 1/2 c. tomato juice or V-8 juice, no more

Directions:
Directions:
Don't worry about measurements. Line bottom of 9 x 12 inch pan or large casserole with meat. Do not brown. Add potatoes, carrots, celery and onions.

Combine salt, pepper, sugar and tapioca together. Sprinkle all over top. Then add tomato juice. Cover pan tightly with heavy foil. Do Not peek. Bake at 275 degrees for 4 hours. Serves 6.
