Carrabba's Chicken Marsala Recipe

chicken breast

2/3 c margarine
2 slices prosciutto ham, diced
4 tsp minced shallots (or green onions)
4 tsp minced garlic
16 oz sliced mushrooms (drained)
1/2 c Marsala wine
1/2 tsp pepper
2 c chicken broth
4 tsp cornstarch
2 tsp minced fresh parsley
4 tbsp. evaporated milk

Chicken spice:
2 1/2 tsp salt
2 tsp pepper
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp marjoram
1/2 tsp garlic powder
1/2 tsp onion powder

Directions:
Directions:
Melt margarine over low heat in medium saucepan. Turn up to med/high to saute the proscuitto for 2-3 minutes. Be careful not to burn the margarine! Add shallots and garlic and saute for 30 seconds. Add wine and simmer for another 30 seconds or so, then add drained mushrooms and pepper. Simmer over med/high heat for 5 minutes. Dissolve corn starch in a small amount of water. Add to saucepan and simmer for addition 5 minutes. Add parsley and evaporated milk and simmer 3-4 minutes til thickened. Remove from heat and cover until needed.

Preheat grill to high heat. Combine spices in small bowl. Use back of spoon and crush to make a finer blend. Spray each breast generously with olive oil. Sprinkle blend over both sides and grill 6-8 minutes per side or until done. Serve by arranging each chicken breast on a plate and spoon marsala sauce on top.

This is great with colored spiral noodles. Add some margarine, italian seasoning, and grated parmesan cheese. Delish!
