4 quarts chicken broth 10 celery stalks, chopped 2 carrots, chopped 2 large onion, chopped salt to taste pepper to taste 6 egg yolks juice of 2 lemon lemon slices

Directions:
Directions:
Simmer broth, celery, carrots and onions for 1 hour.Add salt and pepper to taste. In double boiler(do not let liner of double boiler touch hot water) beat egg yolks and slowly add lemon juice; beat.Strain broth and add to egg mixture while both are still warm,stirring quickly. Serve with a slice of lemon on top. Good hot or cold.
