Mom’s Blueberry Muffins Recipe

1 ¾ C all-purpose flour
½ C sugar
2 tsp baking powder
½ tsp salt
½ C cold butter cut into 4 pieces
½ C milk
1 egg beaten
1 C fresh or thawed frozen blueberries

Directions:
Directions:
1) Preheat oven to 400 º F .
2) Measure flour, sugar, baking powder and salt. Process with steel blade, on and off to mix. Add butter to the flour mixture.. Process on/off 8-10 times or until mixture resembles coarse crumbs. Combine milk and egg. Pour mixture into flour mixture. Process on/off 5-6 times or just until flour is moistened. Do not overprocess. Batter should be lumpy.
3) Gently fold in 1 cup blueberries. Spoon batter into muffin cups or greased muffin pan, filling each 2/3 full. If you like a crunchy top, sprinkle with turbinado sugar. Bake until golden, 20-25 minutes. Serve.
This recipe along with Mom and Dad’s blueberries make for the best blueberry muffins I’ve ever had,
and whenever I make them everyone asks for her recipe. Beware the batter will seem very dry and you will wonder how on earth they end up tasting so good. This recipe only makes 8-12 muffins, so I suggest doubling or tripling the recipe for a crowd.
