12 ½ ounces AP flour
1 tsp salt
2 T sugar
12 T cold butter, cut into ¼ inch slices
½ C cold vegetable shortening cut into 4 pieces
¼ C cold vodka
¼ C cold water.

Directions:
Directions:
1) Process 1.5 cups flour, salt and sugar in food processor til combined. Add butter and shortening and process until dough just starts to collect in uneven lumps. (Looks like cottage cheese curds and no uncoated flour.)
2) Scrape bowl down with spatula and redistribute dough around the blades.
3) Add remaining cup flour and pulse until mixture is evenly distributed around the bowl. 4 to 6 pulses. Empty into medium bowl.
4)Sprinkle vodka and water over the mixture (note – I hold some water back since a lot depends on humidity) With rubber spatula, use a folding motion to mix, until the dough is slightly tacky and sticks together. If you need to, now add more water. Divide the dough into two even balls and flatten each into a 4 inch disk.
5) Wrap in plastic wrap and refrigerate at least 45 minutes , or up to 2 days.

This has become my go to pie crust for everything. Very nice to work with and great texture and crumb when baked.
