4 Tbsp.butter 3/4 cups onion, chopped or 2 leeks,sliced and cubed 4 cups cucumber, unpeeled and diced 1 cup raw potatoes, diced 4 cups chicken broth 4 sprigs parsley b1 tsp.salt 3/8 tsp.pepper 3/8 tsp. Dry mustard 2 cups heavy cream Chopped chives and cucumber, to garnishes

Directions:
Melt butter and cook in it until transparent. Add remaining ingredients except cream and garnishes.Bring to boil. Simmer for 15 minutes or until potatoes are tender.Puree in blender or food processor. Correct seasonings and chill.Before serving,add cream. Garnish with chopped chives and cucumber
