1/2 cup butter 1 small bunch onions,chopped 1/2 cup parsley, finely chopped 2 Tbsp.flour 1 pint half-and-half 1/2-lbs.swiss cheese,grated 1 Tbsp.sherry red pepper to taste salt to taste 1-lbd.white crabmeat

Melt butter in heavy pot and saute onion and parsley. Blend until in flour,cream and cheese is melted. Add remaining ingredient and gently fold in crabmeat. May be served in chafing dish with Melba toast or in patty shells.
