Ingredients: DAY 1 - 5 3 ½ pounds small cucumbers 1 cup salt 9 cups water
DAY 6 2 cups vinegar 4 cups water 1 ½ tsp alum
DAY 7 3 pints vinegar 3 lbs. granulated sugar 1 ounce celery seed 1 ounce cassia buds (or use whole mixed spices) 3 pieces (1-inch) stick cinnamon 1 ounce whole allspice

Directions:DAY 1 -5 Wash and drain cucumbers. To make the brine, combine 1 cup salt and 9 cups water. Put cucumbers in to a crock and cover with the brine. Weight down and let stand for 3 days. Drain and place in fresh water. Repeat this process, changing the water each day for 3 additional days.
DAY 6 Slice the pickles. Combine all Day 6 ingredients. Slowly heat mixture to boiling point but do not boil. Cover pickles.
DAY 7 Drain and wipe dry. Combine Day 7 ingredients (tie spices in a cheesecloth bag) and bring to a boiling point but do not boil. Pour mixture over pickles and let stand overnight.
DAY 8 Drain pickles and heat syrup (above mentioned mixture) again. Pour over pickles.
DAY 9 Pack pickles in jars. Again heat syrup to boiling point and pour over the pickles in the jars. Seal at once. When packed tightly, recipe will yield 4 pints pickles. |
