1 lb. carrots
1/2 c. butter, melted
3 eggs
3 T. flour
1 t. vanilla
2/3 c. sugar
1 t. baking powder
1 t. cinnamon
powdered sugar for topping

Directions:
Directions:
Cook, drain, then puree' carrots.
Add melted butter, then remaining ingredients in order.
Pour into well-buttered, 1 quart baking dish.
Bake for 45 minutes at 350 degrees.
Sprinkle lightly with powdered sugar.

Recipe can be doubled. Margarine and Pam can be used to cut fat.
