2 cloves garlic (minced)
1 lime
2 baby bok toy
1 shallot
1/4 oz. thai basil
10 oz ground pork
1 1/2 t. fish sauce
1 t. sriracha
2 T. soy sauce
2 c. steamed basmati rice

Directions:
Wash and dry all produce. Mince garlic. Halve lime; cut one-half into wedges. Trim and discard bottom of bok choy. Thinly slice stalks and leaves cross-wise. Halve, peel and thinly slice shallot. Pick basil leaves from stems and roughly chop. Heat a drizzle of oil in pan over medium-high heat. Add shallot and cook until soft, approx. 3 minutes. Add pork and cook until browned. Toss in all but a pinch of garlic. Cook until fragrant and pork is cooked through.

Make sauce, stirring together 1 T. water and 1 1/2 t. sugar. Microwave until sugar is dissolved (approx. 30 seconds). Stir in 1 1/2 t. fish sauce, 1/2 t. sriracha and squeeze of lime.

Add bok choy to pan and 1 T. soy sauce. Cook, tossing until bok choy is tender. Cook rice according to instruction. Stir in chopped basil to pan. Season with more lime and soy sauce. Plate with rice, sauce and additional lime.
