1 green pepper, diced
2 stalks celery, diced
2 medium onions, diced
1/4 cup vegetable oil
4 oz can sliced mushrooms, drained
14 oz can red kidney beans, rinsed and drained
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp paprika
1 1/2 lbs lean ground beef
1 pkg all beef hot dogs, sliced on diagonal into 1" long pieces
16 oz can Hunt's tomato sauce

Directions:

1. Use a large, wide bottom frypan with straight sides (at least 3 - 4" tall) or a dutch oven or a soup pot. Sauté green pepper, celery and onions slightly in oil, about 5 minutes. Add mushrooms and seasonings and cook stirring over low heat until mushrooms are heated through. Add ground beef half at a time, stirring to break meat completely apart into very small pieces. Once all ground beef has been added and crumbled, add hot dogs and tomato sauce. Cover and simmer for 15 minutes more.

2. Serve with a salad and Ace baguette. Can also be served over rice or elbow macaroni. For cheese lovers, sprinkle each serving with grated or shredded cheddar cheese.
