2 cups cake flour, 1 ¼ cups sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon salt, ⅓ cup soft shortening (Crisco), ½ cup buttermilk, 1 cup mashed overripe bananas (about 2 bananas), 1 teaspoon vanilla, 1 large egg

Sift flour sugar, soda, powder and salt into large bowl Add everything but the egg and beat two minutes. Add egg and beat 2 more minutes, Place in 2 8" cake pans sprayed with Pam. Bake 350 degrees 30-35 minutes until toothpick comes out clean.

For buttercream icing: Combine 3-4 tbsp milk, 1 stick of softened butter, 1 tsp of vanilla extract, and 3 3/4 cup confectioner’s sugar in a large bowl. Beat at medium speed 1 to 2 minutes, until creamy. If desired, add more milk until frosting is spreading consistency.

My grandma made this every year for my birthday when I was a child, and I still can’t find a better banana cake. Grandma says if you don’t have buttermilk, you can use whatever milk you have on hand, just take out a tsp of the milk and replace with vinegar!
