3 C milk
2 C. flour
1 t. sugar
1 t. salt
1 t. baking powder

Directions:
Directions:
Beat eggs with a whisk. Add milk and mix well. Add flour, sugar, salt, and baking powder. Beat well. The batter is very thin with small lumps.

Preheat a large non-stick pan. Spray pan with Pam and cover bottom of pan with a thin layer or pancake batter (about ¼ Cup). Twist and turn pan to get an even layer. Flip with a large spatula when bottom is cooked (they cook very fast).

Cook other side and then fold into quarters to keep warm until all are cooked. Whisk batter before pouring each pancake.

Serve with butter, syrup, fruit, jam, sugar, etc. Spread down the middle then roll up like an enchilada.
