Pork Carnitas Recipe

5 lbs pork shoulder (butt), skinless, bone in
1 onion chopped
1 jalapeno, seeded, chopped
2½ t. salt
1 t. pepper
4 cloves garlic, minced
2 oranges, juice only
1 T. dried oregano
2 t. ground cumin
1 T. olive oil

Mix up dry ingredients and rub over pork. Put pork in crockpot fat side up.

Dump rest of ingredients over pork

Cook on high about 6 hours

Shred pork-heat cast iron skillet with 1 T oil.

Toss pork into pan and drizzle some juices into pan. Let it cook down. No not turn pork. Let it get a crunchy side to it.

Serve on corn tortillas heated in pan without oil.
