1000 ml 196 proof Everclear
zest of 20 organic lemons (regular lemons have wax and pesticides on the skin) Be sure not to get any of the white pith, to infuse the aromatic yellow spirit
Put in glass jar in a cool dark place for 40 days (stir occasionally)
Mix simple syrup 4 1/2 cups water to 3 1/2 cups sugar, boil for 5 to 7 minutes then let cool
Add to the lemon alcohol mixture
More simple syrup may be used to decrease the proof
Let sit it a cool dark place for 40 days (Stir occasionally)
Bottle and store in freezer
